Marinated Cucumbers

  • 1 English cucumber, washed and sliced

  • 1/4 - 1/3 cup rice vinegar

  • 1/4 - 1/3 cup cool water

  • 1/2 teaspoon salt

  • 1/2 teaspoon sugar

  • 1 teaspoon guchujang pepper paste or 1/2 teaspoon dried chili flakes

Wash and slice the cucumber into 1/4 inch slices. Heat the vinegar in a small sauce pan, adding salt and sugar, stirring until just dissolved. Remove from heat and add water to cool. Place the cucumbers, pepper paste, and vinegar and water mixture in a sandwich sized zipper bag and seal, squeezing out as much air as possible. Let marinate for at least an hour, drain, and serve.

Note: Leave the cucumber peel on if you want to serve them as a snack, but it can be removed if you want to use them as a sandwich topping or garnish. These are great as a topping for burgers or grilled meat. Also great served as a cocktail hour snack.
